Dyana's Aji & BobAli's Lentil Stew

Introductions
The three companies involved in today's recipe (are once again) Dyana's Aji, BobAli Foods, and Forstbaur Farms!
Maureen and Parviz created BobAli Foods in 2012, and you can still find them at farmer's markets today. The name BobAli is a mashup of their fathers' names, respectively. BobAli specializes in the highest quality humus, tapenade, and pesto - the hummus is a crucial feature of the recipe below! Mary and Hans founded Forstbauer Farm in 1977. It is is a Certified Organic Farm in Chilliwack British Columbia, farmed using Biodynamic Principals and Certified through the Biodynamic Society of British Columbia (Demeter) and BCARA. Forstbauer is not only an amazing farm, but has also been the place Mary and Hans have called home and raised 12 children in. You read that right twelve! As for Dyana'sAji - do you know that we have an unofficial board of directors?! It may be one of the most diverse boards you've heard of - we have Hobbs (our foster parrot), Owen (our under 1-year-old - a recent addition to the family), and Allison (an adult human - less interesting surely). Prep: 5-10 Minutes Cook: 8 Hours
Ingredients
1/2 cup of Dyana's Aji (find your heat preference here)
8 oz (1 container) of BobAli Curried Carrot and Ginger Hummus (you can find it here)
4 cups butternut squash - Forstbauer Farms (peeled, seeded, cubed)
1 white onion- Forstbauer Farms (finely chopped)
3 cups vegetable stock
2 cups of red lentils (dried; uncooked)
19 oz diced tomatoes
13.5 oz full fat coconut milk (1 can)
2 cloves of garlic (minced)
2 tbsp fresh ginger (grated or chopped)
1 tbsp curry powder
2 tsp ground coriander
2 tsp garam masala
2 tsp turmeric
2 tsp ground cumin
1 tsp salt
Directions
Step 1: Combine ingredients
Combine all ingredients - we're not joking...that's it!
Step 2: Time to slow cook
Stir and cook low for 8 hours
Step 3: ENJOY!
