Quick Meals: Dyana's Aji, Nina's Pierogies, & BobAli's Sheet-Pan Roasted Pierogi Dinner (With Video)

This simple 30-minute recipe is perfect for those nights when you don't want to spend hours in the kitchen (but also don't want to forfeit flavour)! It is easy, delicious, and supports three women-owned (and family operated) businesses!

This recipe is the first in our "Local Community" recipe series!

This project is an incredible demonstration of what it looks like when local businesses band together. The COVID-19 pandemic brought about numerous challenges for local businesses, but it also paved way for some unique collaboration opportunities. Our "Local Community" recipe series is one of those opportunities, in which we work closely with local businesses to not only support one another but bring you some time-saving and drool-worthy recipes - and we will be bringing you one of these amazing recipes every two week!


The three companies involved in today's recipe are Dyana's Aji, Nina's Pierogies, and BobAli Foods. But before we dig in (see what we did there?), let us introduce you to everyone joining in on this yummy dish!


Nina's Pierogies is owned by Yvonne and is named after her mom, Nina (which is also Yvonne's middle name!). Yvonne makes the best gluten-free or organic unbleached dough, and her pierogies come in 14 different flavours. Vegan options are available and are so delicious that they could even bring a meat-eater to their knees! You can find all of her delicious options on her website here. Maureen and Parviz created BobAli Foods in 2012, and you can still find them at farmer's markets today. The name BobAli is a mashup of their fathers' names, respectively. BobAli specializes in the highest quality humus, tapenade, and pesto - their pesto is a crucial feature of the recipe below! Like Nina's Pierogies and BobAli Foods, our name (Dyana's Aji) is dedicated to someone very important - our founder, Dyana! Our product lines have evolved over the years, but our main goal has always been to encourage experimentation and fun in the kitchen by using the unforgettable Latin American flavours of our products! Now that we have introduced everyone let's get into the recipe!


 

If you want, this recipe has the potential to be an entirely vegan, gluten-free, dairy-free, nut-free meal!


Time Required


Prep: 5-10 Minutes

Bake: 18-20 Minutes

Total Time: 30 Minutes Max

Ingredients

  • 1 pound of Nina's frozen pierogis (you can pick your flavour pierogi here)

  • 2 TBSP of Dyana's Aji (you can pick your Aji heat-level here)

  • 1 TBSP of BobAli pesto (you can find it here)

  • 1 small red onion (chpped)

  • 1 pint of grape or cherry tomatoes

  • 2 medium bell peppers (chopped)

  • 4 cloves of garlic (finely chopped)

  • 2 TBSP of olive oil

  • 1/4 TSP of salt

  • Fresh ground pepper to taste

Directions


Step 1: Turn Up The Heat


Pre-heat oven to 230°C (450°F).


Step 2: Let’s Get Choppin'


Chop the red onion, bell peppers, and garlic.


Step 3: Bring It All Together

Combine all of the ingredients in a bowl and mix until everything is evenly coated.

Step 4: Cook

Place on a lined sheet-pan and bake for 18-20 minutes or until the pierogies are crispy and golden brown!
